LOQUAT PANCAKE & RICOTTA

Apart from a childhood attachment to this fruit, I lately realised how many people don’t really know and/or ever tasted this kind of "forgotten" and delicious fruit, and found out that apparently it is quite well used in the Asian markets and cuisine (I will investigate more on that!), including Korea, Japan and China.

So pack up some good Vitamins ( A, C & B), fibers and minerals by making this every day morning pancake!

Ingredients (makes 5 to 6 pancakes)

  • 1 cup of flour of your choice (I used 50% spelt & 50% arroz)

  • 1 teaspoon of baking powder

  • 1/4 teaspoon of salt

  • 11/4 cup of milk (I used almond)

  • 1 large organic egg

  • 1/2 teaspoon of vanilla extract

  • Sugar - You can also add it, but I didn't as I used a lot of honey to serve it!  

Method:

Mix and whisk all the ingredients together and add the mixture (a big ladle scoop at the time) on a hot coconut oiled saucepan. Serve with some loquat jam (see previous post here), ricotta, honey and a drizzle of chilli infused oil.
